Antioxidant and microbial enumeration of sliced pieces of Chakaiya variety of Amla (Emblica officinalis) irradiated with various doses of electron beam irradiation

Abstract
Fruits are natural sources of nutrients. It has rich amount of vitamins, minerals and antioxidant components. The present research was employed that amla fruit was irradiated with various does of electron beam irradiation to improve the shelf life. The antioxidant activity of irradiated and control samples were evaluated by 2, 2-diphenyl-1-picrylhydrazine(DPPH), tannins, vitamin C and phenolic compounds. In order to study the microbial enumeration (Bacterial and fungal) were determined after the irradiation at dose level of 0.05 to 0.25kGy. Results showed that, no significant effect on antioxidant and antimicrobial activities of electron beam irradiated amla were observed. Tannin and total phenolic compound activities were increased in high dose (0.25kGy) and decreased in 0.05kGy. Vitamin C and tannin contents were increased and no adverse effect of amla sample. Sliced pieces of amla samples the microbial load increased in 0.05kGy to 0.25kGy.
